Strawberry Shortcakes

One bright thought, during this dreary time of year, is that strawberries will soon be in season! Containers of these delicious red berries will soon be everywhere. Here is the recipe for our favorite spring-time dessert, strawberry shortcakes:

Shortcake Recipe:
2 1/3 cup Bisquick mix
1/2 cup milk
3 tablespoons sugar
3 tablespoons butter or margarine, melted

Stir ingredients together until soft dough forms. Drop by spoonful onto a baking sheet. (I make 8 to 10 shortcakes.) Sprinkle generously with more sugar and bake for 8 minutes at 425 degrees. Remove from baking sheet to cool.

Whipped Cream Recipe:
Whip 1 cup whipping cream until peaks form. Add 3/4 cup powdered sugar and 2 teaspoons vanilla (I love the Mexican vanilla from The Store). Whip again until very thick.

Then, cut up the berries (in addition to the strawberries, I like to add blackberries). Place the berries on top of a shortcake and sprinkle with lots of powdered sugar. Finish with a large spoonful of whipped cream and enjoy!
